Description: Isesou Miyako Rice Koji Dried - This fermented rice product can be used in many ways to make healthy dishes, such as homemade miso or amazake.

Cooking Direction: Preparation of Miso Paste (2.5kg): 1. Soak 600g soybeans in three times the amount of water for one night. 2. Boil beans for 3-4 hours or in pressure cooker for 40 minutes. 3. Mix 600g koji and 240g salt together. 4. Drain the cooked beans and collect the cooking water. 5. Mash the cooked beans while they are still hot. 6. Add the cooled bean cooking water to the koji-salt mixture. The amount can be varied independently depending on the consistency. 7. Now mix the koji salt mixture with the mashed beans. Depending on the consistency, add some more of the cooking water. 8. Put the paste without gaps in a large container, lightly salt the surface and put cling film directly on the paste. It is best to press and cover with a heavy object (see illustration at step 8). 9. Leave to rest in a cool, dark place for about 6 months in winter and about 3 months in summer. In the meantime, open once and remove mold if necessary.
